Chicken Milanese
PREP TIME: 20 MINUTES
COOKING TIME: 40 MINUTES
SERVES: 4
This Chicken Milanese is inspired by a classic dish from a beloved Italian restaurant in Connecticut—thinly pounded, golden chicken cutlets simmered in a white wine butter sauce, topped with melted mozzarella and spicy long hot peppers. It’s bold, comforting, and brings that perfect balance of crispy, cheesy, and spicy to your dinner table. A must-try for fans of elevated Italian comfort food.
Ingredients:
1 lb boneless skinless chicken breasts
2 large eggs
1 cup seasoned Italian breadcrumbs
6 tbsp canola oil, divided
5 tbsp salted butter
½ cup dry white wine
1 lemon, zested and juiced
pinch of salt
8 oz block whole milk mozzarella cheese, thinly sliced
4 long hot peppers, whole
Tools:
Parchment paper
Rolling pin
Directions:
1.Preheat oven to broil.
2.Place each chicken breast in between two sheets of parchment paper. Pound flat using a rolling pin or meat tenderizer.
3.On a small, flat plate, beat the eggs.
4.On a separate plate, spread the breadcrumbs out.
5.Heat 2 tbsp of oil on medium-low in a large frying pan on the stove top.
6.Dip each chicken breast first in the beaten egg and coat on both sides. Then take the egg coated chicken and place it on the breadcrumbs, coating it on both sides.
7.Fry the chicken, one breast at a time, until lightly browned on both sides, about 4 minutes. Add 1 tbsp of oil each time you add a breast to the pan. Transfer to a plate lined with a paper towel. Once all chicken is browned, transfer to a baking dish.
8.Meanwhile, melt the butter in a small saucepan over medium-low heat. Add the wine, lemon zest, and juice and bring to a low boil. Add a pinch of salt, reduce heat to low, cover, and simmer for about 10 minutes until reduced by half. Pour over the chicken breasts.
9.Place the slices of mozzarella over the top of the chicken breasts. Place 1-2 peppers on top of the cheese on each chicken breast. Broil for about 10 minutes until the cheese is melted and lightly browned around the edges.
NOTES:
You can buy chicken breasts, slice them in half, and then pound flat. Alternately, you can buy chicken cutlets and pound them slightly.
You can serve the chicken over pasta or with a side of mashed potatoes and seasonal roasted vegetables.
When an unexpected friendship sparked a calling I couldn't ignore, I found myself on a solo journey to Greece — carrying a forgotten bag, chasing flavors, and celebrating my 42nd birthday in a place that felt like home from the moment I arrived. This is the story of how I found courage, connection, and a new sense of belonging under the Grecian sun.
