Homemade Spaghetti with the KitchenAid: My Go-To Dinner Party Pasta

When I want to impress without the fuss, I turn to this homemade spaghetti recipe using my KitchenAid mixer. It’s the perfect balance of ease and elegance—fresh pasta made with simple ingredients and rolled into perfect strands that cook up beautifully. Whether you’re hosting a cozy dinner or planning a special meal, this is my foolproof way to bring a little Italian magic to the table.
Ingredients:
1 cup all-purpose flour, plus extra for shaping
1 cup 00 flour
½ tsp salt
2 large eggs
1 tbsp olive oil
6 tbsp lukewarm tap water

Kitchen Aid Pasta Shape attachment

Directions:
1.In a large bowl of a Kitchen Aid stand mixer, add the flour and salt. Stir to combine.
2.Add the eggs and olive oil. With a dough hook attachment, on medium speed, combine all ingredients.
3.With the mixer running, pour in the water, 1 tbsp at a time, until the dough starts to clump together.
4.Knead on medium speed for about 6-7 minutes or until the dough comes together into one ball. The dough should be elastic and smooth, if the dough is too lumpy, continue to knead another minute.
5.Remove the dough from the bowl, form into a ball, and wrap in plastic wrap. Allow to sit at room temperature for 30 minutes.
6.Remove the dough from the plastic wrap and sprinkle a generous amount of all-purpose flour over all sides of the ball. Cut into 4 pieces and flatten.
7.Attach the Kitchen Aid pasta roller attachment to the front of your stand mixer. Set the attachment to the 1 setting and turn your stand mixer on. With the mixer on, insert the flattened dough ball into the roller. Allow the dough to move through on its own through the roller until it has completely moved through. Sift more flour over the dough as it is coming out of the roller.
8.Change the roller attachment setting to 2 and insert the dough again through the roller, sifting more flour as it moves out of the roller.
9.Change the roller attachment setting to 3 and insert the dough again through the roller, sift more flour as needed over the dough as it moves out of the roller.
10.Change the roller attachment setting to 4 and insert the dough again through the roller and allow it to move through again. The dough should be a thin, elastic sheet. Fold the sheet in ribbons onto itself on a floured surface.
11.Repeat until all dough has passed through the 4 settings of the roller.
12.Stop the stand mixer from running and change the attachment to the Kitchen Aid pasta shape, I use the spaghetti attachment.
13.Prepare a baking sheet by lightly coating the bottom with flour. Turn the mixer on and insert each dough sheet into the running shape attachment, allowing it to move through on its own. Sprinkle the spaghetti with flour as it moves through the machine. Wrap the cut spaghetti bundles in little spiral piles and place on the prepared baking sheet.
14.Once all spaghetti has been placed in bundles on the sheet, place in the freezer to dry. Use immediately or transfer to a sealed container and keep in the freezer until ready to use.
NOTES:
You can make this a day or two ahead of your dinner and keep in the freezer on the baking sheet until you are ready to use. If storing for longer than a day or two, place in a freezer safe bag.
To cook, place in a pot of boiling salted water and cook until they float, after only a few minutes.
